A few years ago I ran out of pure vanilla that my Grandparents had brought back to me from a trip. It was the best strongest vanilla extract I had ever used to bake. So, I decided to research how to make my own and from then on I have been combining Vodka and Vanilla and sharing it with friends for gifts and baking with it ever since. This is the perfect gift for any baker aficionados. I just gifted a bottle of vodka and a bag of vanilla beans to a friend for her birthday. She had everything she needed to make her own vanilla.
I use 10 Madagascar bourbon grade 2 vanilla beans to 1.75 liter of mid grade vodka. I prefer a glass bottle verses plastic. I always fear the plastic will give off some flavor so I use a vodka like a Tito’s or a Bacardi. I do use a 100 proof vodka.
Why grade 2 or B, I read that they have a stronger flavor (beans cracked on the vine) and they are a tad bit cheaper. I let my vanilla sit for at least 6 months shaking it each week or when I remember. The longer it sits the better it will be. Get your vanilla started soon and by the Holidays you will have the perfect hostess gift or Christmas gifts made by you.
