1-pound pork tenderloin
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vegetable oil
3/4 cup honey mustard dressing (Newmans Own is great)
6oz bag of baby spinach
3 cups mustard greens
1 Gala apple, chopped
1/2 cup canned black eyed peas drained and rinsed
Preheat oven to 350* Rub pork with salt and pepper. In a large skillet, heat oil on medium high heat. Add pork to skillet, brown each side of pork loin, about 5 min. Add pork loin to oven and bake until 145* about 15 min. Cover loin with foil and let rest for 10-15 minutes then cut into thin slices.
In a large bowl combine spinach, apple, greens peas and remaining dressing, toss. Top with pork.
