1/2 cup olive oil
3 Tablespoons Dijon Mustard
1 Tablespoon Apple Cider Vinegar
1 Tablespoon fresh tarragon or 1 teaspoon dried
6 cups torn fresh spinach
2.5 ounces feta cheese crumbled
6 slices bacon cooked crisp
Blend all dressing ingredients well; refrigerate to blend flavors. This is even better if you make it a few days in advance.
Arrange spinach on plates or in a lg bowl. Sprinkle with cheese and bacon top with dressing.
