Not Your Mamma's Turkey Noodle Casserole

Ingredients
  • 4 cups cubed turkey
  • 7 ounces uncooked noodles
  • ½ cup Parmesan cheese
  • ½ cup bread crumbs
  • Sauce
  • 8 ounces sour cream
  • 3 Tablespoons butter
  • 2 cups cheddar cheese
  • 1 can cream of mushroom soup
  • ½ cup cream or milk
  • 1 clove garlic
  • ½ cup mayonaise
  • ½ teaspoon lemon pepper
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 small can mushrooms
Instructions
  1. Combine all sauce ingredients and mix. In a 9x13 inch pan, alternate ½ noodles, ½ turkey and ½ sauce. Repeat ending with sauce. Sprinkle parmesan cheese and bread crumbs. Bake at 350* for 30 minutes.

This is another great make ahead and always a crowd pleaser. Also freezes well.

Recipe type: Casserole
Serves: 6
Ingredients
  • 8 ounces egg noodles
  • 1 pound of ground beef
  • 1½ teaspoons salt
  • ½ teaspoon dried Italian Seasoning
  • 1 6 ounce can tomato paste
  • 1 14 ounce can diced tomatoes
  • 3 ounces cream cheese
  • ½ cup sour cream
  • ½ cup Italian six cheese blend
Instructions
  1. Preheat oven to 350*. Prepare noodles according to package.
  2. Sprinkle ground beef with 1¼ tsp. salt and Italian seasoning. Cook until browned, stiring often until it crumbles and is no longer pink.
  3. Stir in tomato paste and cook 2 minutes. Stir in tomatoes, ½ cup water and remaining salt. Reduce heat and simmer 8 minutes.
  4. Microwave cream cheese at high for 20 seconds. Stir in sour cream. Stir mixture into drained noodles.
  5. Place noodles in 9x13 casserole dish. Top with beef mixture ad sprinkle with cheese.
  6. Bake at 350* for 25 minutes. You can prepare ahead and even freeze for future use.

Left Overs…Over them or Love them?

I think you are either in the I love left overs camp or no way Jose.
Some say turkey is dry and there is no use for the left over turkey. I think that if you properly prepare the bird left overs can be magnificent for a few days after. Don’t overcook your bird and I think even those in the anti leftover camp will enjoy this tasty recipe after Thanksgiving. In fact I don’t think they will know you used the left over turkey and even stuffing.

Keep in mind, if a recipe calls for chicken you can always substitute turkey.

Kitchen Sink Casserole

This is the perfect clean out of your cupboard and fridge recipe. It has everything but the kitchen sink in it!

Ingredients
  • Cook whole chicken, debone and cut into pieces. (use left over turkey 4 cups)
  • 8 ounces of noodles cooked in chicken broth
  • 1 cup sour cream
  • 8 ounces cream cheese
  • 2 can cream of mushroom soup
  • 1 small chopped onion
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
Instructions
  1. Combine all ingredients. Place in a 9x13 baking dish and bake in a preheated oven at 350 degrees. Bake for 45 minutes.
  2. Remove casserole from the oven and top with 2 boxes of prepared stuffing. Prepare stuffing according to box. Return to the oven for 5 more minutes.
  3. Enjoy

Chicken Divan Casserole

Ingredients

2 (10-ounce) packages frozen broccoli, chopped

6 cups shredded chicken, cooked

2 (10 3/4-ounce) cans condensed cream of mushroom soup

1 cup mayonnaise

1 cup sour cream

1 cup grated sharp Cheddar

1 tablespoon fresh lemon juice

1 teaspoon curry powder

Salt and pepper

1/2 cup dry white wine

1/2 cup freshly grated Parmesan

1/2 cup soft bread crumbs

2 tablespoons butter, melted

Directions

Preheat oven to 350 degrees F.

Remove the outer wrappers from the boxes of broccoli. Open 1 end of each box. Microwave on full power for 2 minutes, until thawed. Drain the broccoli and put into a casserole dish. Add the shredded chicken.

In a medium bowl, combine the soup, mayonnaise, sour cream, Cheddar, lemon juice, curry powder, salt and pepper, to taste, and wine. Whisk together to make a sauce. Pour the sauce over the broccoli and chicken. Mix well with a spatula.

Place the mixture into an 11 by 7-inch casserole dish or 2 (9-inch) square disposable aluminum foil pans that have been sprayed with vegetable oil cooking spray. Pat down evenly and smooth with a spatula. Combine the Parmesan, bread crumbs and butter and sprinkle over the top.

Bake for about 30 to 45 minutes.
